That is true. However each time I have been to Splendido for dinner Victor Barry has come out to serve us one of our dishes and just have a talk about how things are going. Granted, his tasting menus are much shorter and the sheer number of plates going out of the kitchen would be lower which could afford him the time to go talk to guests.
BUUUT you make a good point that such service shouldn't be expected.
