When we did the tour at Bruce's Mill, they said that due to regulations, they can't actually serve anything they produce since there are thousands of people traipsing through the forest. The tour guide said most places either do tours OR produce, or they have a separate area where the trees being tapped for production are that are off-limits to visitors. So that may explain why you can't taste the on-site syrup in a publicly funded place like that - it's intended for demo purposes only and they aren't allowed to sell it.
