Okay, since I saw this I've been intrigued. I picked up a small Shopsys corned beef the other day and decided to dive into the smoked deli meat world. Sorta.
Anyway, I made Montreal Smoked Meat and all I can tell you is it turned out ridiculous. Seriously, this was amazing.
So, what I did was;
1 pt. salt, 1 pt. salt free Montreal steak seasoning, 1/2 pt. ground pepper. Mix.
Placed the corned beef in a tupperware container and covered with spice mix. thoroughly.
Marinaded for a day.
Built my fire and got the smoker rockin'. Smoked the meat for 3 hours @ 250°
1/2 hour in a steamer.
Slice and put on a nice Munich style Dimpflmeyer's rye.
Did 2 sandwiches, 1 with Keen's and 1 with Super Extra Hot Caplansky's mustards. The Caplansky's was better but not by much.
