I have not seen them in the GTA, but they were a filling choice for tacos and other tortilla-based items in Mexico on my most recent trip (Chiapas, Oaxaca and Veracruz states). I never tried them, but my husband tried to order them as a memela filling (another masa-based corn item, not dissimilar to thick, handmade tortillas). Unfortunately, they were out of udder. I did ask how they're cooked. I was told that they boil/braise for a long time, then dice it finely. I understand the flavour is bland, but the texture is a bit chewy, say toothsome. We definitely saw udder again as a potential taco filling at more than one stand.
