It can be quite noisy in the main dining room when there's a full house, but I would think Saturday night might be quieter than some week nights, as TorontoJo mentions below. When I say it's quite noisy, I mean that the background noise can make conversation at the table a little difficult for some people.
I'd characterize the scene as mostly over 45 at dinner. Atmosphere is minimalist.
While I eat at Nota Bene more frequently than any other contemporary/continental restaurant in TO, I'd probably choose a place like Canoe or Scaramouche for an anniversary.
