Well, I recently posted a review of Maialino as a pleasant neighbourhood place. Tonight was the first night I went in without Chef Roberto Marotta at the helm and since the intro of pizzas. I have to say, the pastas were awful. I ordered the carbonara and my husband the bucatini. Mine carbonara had spongy undercooked pancetta and no evidence of an egg or egg yolk. My hubby's bucatini was equally limp. Neither pasta approached the flavour, authenticity or al dente consistency that we experienced before. What a complete disappointment. The only saving grace was the still impeccable cannoli.
